Resumen
Objetivo: Evaluar el efecto de la educación alimentaria y nutricional sobre el conocimiento relacionado con alimentación y nutrición de los niños escolares de un colegio oficial de Usme en Bogotá. Materiales y métodos: Se realizó un ensayo comunitario de tipo antes y después con un muestreo por conveniencia. Para el desarrollo del estudio se aplicaron encuestas de caracterización socio demográfica, tabuladas por Microsoft Excel 2016. Se realizaron sesiones en grupo con estrategias de educación alimentaria y nutricional. Se aplicó un cuestionario CAP antes y después de las intervenciones para evaluar el conocimiento alimentario e identificar la etapa del modelo transteórico de los niños participantes. El análisis de los resultados de antes y después de los cuestionarios CAP se realizó mediante las pruebas de McNemar y Wilcoxon usando el software STATA. Resultados: Los principales hallazgos reflejan un cambio en el conocimiento alimentario, así como un desplazamiento en las etapas del modelo transteórico. Antes de las intervenciones los niños tenían conocimientos limitados sobre alimentación saludable y sus componentes, posterior a estas mejoró la capacidad de diferenciar entre frutas y verduras, el conocimiento sobre nutrientes y alimentación saludable. Se encontró significancia estadística (p <0.05) para el cambio porcentual de conocimientos y actitudes y el cambio en el tiempo de la intervención Conclusiones: Las estrategias de EAN mostraron eficacia al momento de ampliar conocimientos alimentarios.
Abstract
Objective: To evaluate the effect of food and nutrition education on the knowledge related to food and nutrition of school children from an official Usme school in Bogotá. Materials and methods: A community test of the before and after type was conducted with a convenience sampling. For the development of the study, socio-demographic characterization surveys were applied, tabulated by Microsoft Excel 2016. Group sessions were carried out with food and nutrition education strategies. A CAP questionnaire was applied before and after the interventions to evaluate the food knowledge and identify the stage of the transheoretical model of the participating children. The analysis of the before and after results of the CAP questionnaires was carried out using the McNemar and Wilcoxon tests using the STATA software. Results: The main findings reflect a change in food knowledge as well as a shift in the stages of the transheoretical model. Prior to the interventions, the children had limited knowledge about healthy eating and its components, after these improved the ability to differentiate between fruits and vegetables, knowledge about nutrients and healthy eating. Statistical significance was found (p <0,05) for the percentage change of knowledge and attitudes and the change in time of the intervention Conclusions: The strategies of nutrition education shod efficacy at the time of expanding food knowledge.
