El etiquetado del menú como un factor determinante en la elección del almuerzo por parte de los estudiantes de la Pontificia Universidad Javeriana

Resumen
La alimentación en universitarios está relacionada con enfermedades no trasmisibles, sobrepeso y obesidad principalmente. Objetivo: Determinar como el etiquetado de menús, es un factor que influye en la compra del menú del almuerzo, en estudiantes de la Pontifica Universidad Javeriana. Materiales y métodos : El estudio fue descriptivo exploratorio observacional de corte transversal, donde aleatoria e individualmente, se aplicó una encuesta semi-estructurada, utilizando una carta de menús, para ver las asociaciones entre las categorías del etiquetado del menú con relación a la razón de selección del menú de los estudiantes. Se realizó análisis estadístico y de la narrativa, utilizando: Microsoft Excel 2013, SPSS versión 17.0 y Nvivo versión 12.0. Resultados: El etiquetado nutricional no fue factor de elección de compra, mientras el precio y el gusto, sí. El 89%, lee la pantalla que declara el menú y aporte nutricional; y el 5% consulta la página web. El etiquetado de menús se asoció a la información general del menú, mientras la alimentación saludable hacia el tipo de alimentos; como frutas y verduras específicamente. Por otro lado, la razón de alimentación de saludable se asoció de manera positiva con la categoría de información nutricional acorde al SA-PUJ. Conclusiones: El precio fue el determinante principal de compra. La percepción frente al concepto de etiquetado de menú estuvo dada a la información general del menú y la alimentación saludable hacia los alimentos que la componen. Finalmente, hubo asociación positiva entre la categoría de información nutricional acorde al SA-PUJ y la razón de alimentación saludable.
Abstract
The feeding in university is related to diseases not communicable, overweight and obesity mainly. Objective: To determine how the labeling of menus is a factor that influences the purchase of the lunch menu, in students of the Pontifical Javeriana University. Materials and methods: The study was descriptive observational exploratory cross-section, where randomly and individually, a semi-structured survey was applied, using a menu, to see the associations between the categories of Menu labeling relative to the Student menu selection ratio. We performed statistical analysis and narrative, using: Microsoft Excel 2013, SPSS version 17.0 and Nvivo version 12.0. Results: Nutritional labeling was not a purchasing choice factor, while price and taste, if. 89%, reads the screen that declares the menu and nutritional contribution; and 5% check the website. Menu tagging was associated with the overview of the menus, while eating healthy to the type of food; like fruits and vegetables specifically. On the other hand, the healthy diet ratio was positively associated with the nutritional information category according to the SA-PUJ. Conclusions: The price was the main determinant of purchase. The perception against the concept of menu labeling was given to the general information of the menu and the healthy feeding to the foods that compose it. Finally, there was a positive association between the nutritional information category according to SA-PUJ and the healthy eating ratio.
