Characterization of the in vitro digestibility of starch in commercial maize flours using typical colombian arepas as a model foodResumo
La incidencia actual de la diabetes tipo II a nivel mundial, ha dado lugar al desarrollo de alimentos con contenido de almidón que favorezcan una baja respuesta posprandial, aumentando la proporción de contenido de carbohidratos lentamente digeribles e indigeribles. Por lo anterior, este estudio tuvo como objetivo realizar una caracterización sobre el contenido de almidón total (AT) y sus fracciones digestibles (almidón de rápida digestión, ARD y almidón de lenta digestión, ALD) en arepas elaboradas con harinas de maíz comercial producidas por diferentes tipos de maíz y procesamiento (extrusión, nixtamalización y fermentación). Los resultados mostraron, que el contenido de AT oscila entre 50,04-68,55% siendo las Harinas de Maíz extruidas las de mayor contenido, mostrando diferencias significativas (p <0,05) con respecto a las otras harinas evaluadas. Los valores de ARD fueron 22,29-39,86 glucosa/100 g FW entre las arepas. Los valores más bajos de ARD corresponden a arepas preparadas con Harina P.A.N. mezcla dulce maíz amarillo y Harina P.A.N. Blanca, significativamente diferente de la muestra control (pan blanco, p <0,05). La Harina de Maíz Blanca Fermentada, mostró el ARD más alto, ligeramente similar al control. Los valores de ALD mostraron un rango estrecho (7,40 - 9,80 glucosa/100 g FW) entre las arepas, excepto las preparadas con Harina P.A.N. Integral (1,56) y Harina P.A.N. Amarilla (4,67). Los presentes resultados brindan un panorama preliminar sobre las fracciones digeribles de almidón de diferentes harinas de maíz comerciales sugiriendo que otros factores además del procesamiento y el maíz ameritan un análisis más profundo para avanzar en la elaboración alimentos a base de maíz con baja liberación de glucosa.
Abstract
The current incidence of type II diabetes worldwide has led to the development of starchy foods that promote a low postprandial response, increasing the proportion of slowly digestible and indigestible carbohydrates. This study aimed to perform a screening of the total starch (TS) and their digestible fractions from commercial maize flours manufactured by different processing and maize types. In this way, maize flours elaborated under extrusion, nixtamalization, and fermentation process were compared on the levels of total starch (TS), rapidly digestible starch (RDS) and slowly digestible starch (SDS) using arepas as a food model. The results show that the TS were 50.04 to 68.55% where extruded maize flour was the highest content, showing significant differences (p <0.05) compared to the other flours evaluated. Values for RDS were 22.29 to 39.86 glucose/100 g FW among arepas. The lowest RDS values correspond to arepas prepared with P.A.N. extruded sweet yellow mix flour and P.A.N. white maize flour and significantly different from the control sample (white bread, p<0.05). The Fermented white maize flour showed the highest RDS and slightly similar to the control. Values for SDS showed a narrow range (7.40-9.80 glucose/100 g FW)) among arepas except for ones prepared with P.A.N. white whole flour (1.56) and PAN yellow maize (4.67). The present results provide a glance at the starchy digestible fractions from different commercial maize flours suggesting that other factors apart from the processing and maize merits further analysis to advance into the elaboration of maize-based food products with low glucose release.
