Physicochemical changes during artisanal roasting of cocoa : a theoretical contribution for the social transfer of knowledge in the village of Alto Guapaya, MetaSommario
La asistencia técnica integral dirigida a la comunidad de Alto Guapaya es necesaria para la producción sostenible del cacao pues impulsa el potencial agroindustrial de sus plantaciones. El objetivo de este estudio fue contribuir teóricamente a la transferencia social del conocimiento de los cambios fisicoquímicos durante el proceso de tostado artesanal del cacao (Theobroma cacao L.) en la vereda de Alto Guapaya, Meta. Se llevó a cabo una revisión de la literatura científica con la que se describieron las principales transformaciones fisicoquímicas del grano de cacao durante la etapa del tostado y a partir de lo hallado, se elaboró una propuesta de material informativo como medio de transferencia social del conocimiento a la comunidad en cuestión. A partir de la revisión de 15 artículos científicos se reportó que para obtener las características deseadas del grano de cacao tostado (en cuanto a color, textura, humedad, concentración de aminas biogénicas y compuestos fenólicos), la temperatura de tostado por método convencional debe oscilar entre 110 y 145 °C. Para transmitir estos conocimientos científicos a la comunidad se hizo uso de un material informativo pedagógico basado en un juego popular en la zona, pues posibilita la apropiación del conocimiento debido a que se traslada la información técnica reportada en la literatura a un lenguaje sencillo adaptándose a las condiciones sociodemográficas de la comunidad. Se concluye que la utilización de este tipo de material permite la transferencia de conocimiento en cuanto a los cambios fisicoquímicos en el grano de cacao inducidos por la etapa de tostado a la comunidad actual de la vereda y que además, será una herramienta que podrá implementarse a futuras generaciones fomentando el diálogo y la construcción colectiva del conocimiento en torno a la generación de valor agregado al grano de cacao.
Astratto
Comprehensive technical assistance directed to the Alto Guapaya community is necessary for the sustainable production of cocoa as it boosts the agro-industrial potential of their plantations. The aim of this study was to contribute theoretically to the social transfer of knowledge of the physicochemical changes during the process of artisanal roasting of cocoa (Theobroma cacao L.) in the village of Alto Guapaya, Meta. A review of the scientific literature was carried out with which the main physicochemical transformations of the cocoa bean during the roasting stage were described and based on what was found, a proposal of informative material was developed as a means of social transfer of knowledge to the community in question. From the review of 15 scientific articles, it was reported that to obtain the desired characteristics of the roasted cocoa bean (in terms of color, texture, humidity, concentration of biogenic amines and phenolic compounds), the roasting temperature by conventional method must oscillate between 110 and 145 °C. To transmit this scientific knowledge to the community, a pedagogical information material was used based on a popular game in the area, since it enables the appropriation of knowledge due to the fact that the technical information reported in the literature is transferred to a simple language adapting to the sociodemographic conditions of the community. It is concluded that the use of this type of material allows the transfer of knowledge regarding the physicochemical changes in the cocoa bean induced by the roasting stage to the current community of the village and that it will also be a tool that can be implemented at future generations promoting dialogue and the collective construction of knowledge around the generation of added value to the cocoa bean.
