Territory, agri-food system and food culture in the land of “Sumercé”. Case study Chaine y Rosal in Soracá Boyacá, between 1970 - 2019résumé
La ruralidad ha sido impactada a lo largo de la historia por el sistema económico imperante, la
modernización, la globalización y el capitalismo. Los mayores afectados son los y las productores de
alimentos, a quienes se les han exigido no solo para satisfacer sus necesidades alimentarias, sino para
alimentar gran parte de la urbanidad del mundo. En Colombia la apertura económica y la revolución
verde han acorralado a las y los pequeños productores a optar por la siembra de monocultivos y la
especialización de estos, dejando de lado prácticas, saberes y costumbres propias. A raíz de esto, se
ha acelerado la migración rural urbana, la urbanización de la frontera rural y se han disparado los
niveles de inseguridad alimentaria, malnutrición y pobreza rural. Boyacá ha participado esta lógica
mercantilista, deslegitimando, incluso involuntariamente, las prácticas tradicionales de siembra,
comercio y consumo alimentos, por tanto, esta investigación pretende relacionar el territorio y el
sistema agroalimentario local para poder estudiar algunos cambios en la cultura alimentaria, más
precisamente en hábitos y memoria alimentaria en la población de dos veredas del municipio de
Soracá.
El objetivo de la investigación fue a Analizar las relaciones entre las transformaciones en el territorio
y los cambios en la cultura y sistema agroalimentario local de las y los pobladores rurales de las
veredas Chaine y Rosal del municipio de Soracá en Boyacá entre 1970 y 2019, valiéndose de la
metodología cualitativa de tipo interpretativa inductiva para poder establecer las transformaciones
territoriales y alimentarias de la comunidad desde sus propias voces, experiencias y sentires. Los
hallazgos de esta investigación tienen que ver con las principales características del territorio leído
principalmente a la luz del sistema agroalimentario local, los hábitos, cultura y memoria alimentaria
y cómo la globalización, publicidad, sistema neoliberal de producción de alimentos y algunas
actividades propias del municipio han hecho que se modifiquen o que se mantengan en el tiempo.
Abstrait
Rurality has been impacted throughout history by the prevailing economic system, modernization,
globalization and capitalism. The most affected are food producers, who have been required not only
to satisfy their food needs, but also to feed a large part of the world's urban population. In Colombia,
economic liberalization and the green revolution have cornered small producers into opting for the
planting of monocultures and their specialization, leaving aside their own practices, knowledge and customs. As a result, rural urban migration and urbanization of the rural frontier have accelerated,
and levels of food insecurity, malnutrition and rural poverty have skyrocketed. Boyacá has
participated in this mercantilist logic, delegitimizing, even involuntarily, the traditional practices of
sowing, trade and food consumption, therefore, this research intends to relate the territory and the
local agro-food system in order to study some changes in the food culture, more precisely in habits
and food memory in the population of two villages of the municipality of Soracá.
The objective of the research was to analyze the relationships between the transformations in the
territory and the changes in the culture and food system of the rural inhabitants of the Chaine and
Rosal villages of the municipality of Soracá in Boyacá between 1970 and 2019, using the qualitative
methodology of inductive interpretative type to be able to establish the territorial and food
transformations of the community from their own voices, experiences and feelings. The findings of
this research have to do with the main characteristics of the territory read mainly in the light of the
local agri-food system, habits, culture and food memory and how globalization, advertising,
neoliberal food production system and some of the municipality's own activities have caused them to
be modified or maintained over time.
