Eating habits in early childhood : an educational strategy from the culinary artResumen
En la globalización del siglo XXI, el sector educativo enfrenta a múltiples fenómenos derivados de los cambios políticos, económicos, sociales y culturales. Sin embargo, uno de los problemas derivados de la globalización se encuentra los hábitos alimentarios y Colombia es uno de los países con mayores índices con respecto a problemas alimenticios a nivel mundial. Por lo anterior, los comportamientos nutricionales de los seres humanos están siendo afectados por la practicidad de consumo de comidas rápidas e industrializadas, lo que forma parte de un estilo de vida no saludable y puede traer consecuencias a futuro en la salud de las personas. En este sentido, los más afectados por esta situación es la población infantil, quienes desde su vulnerabilidad están propensos a consumir productos industrializados (paquetes y bebidas azucaradas). Este fenómeno, de manera indirecta incide en el sistema educativo, transfiriendo la responsabilidad a los docentes para la formación de hábitos alimentarios saludables, que, a su vez, se transforman en agentes dinamizadores de conciencias sociales, para la prevención y promoción de salud a través de las problemáticas actuales inmersas en el contexto social y cultural. La presente investigación tiene como principal objetivo comprender como el arte culinario puede convertirse en una herramienta pedagógica de apoyo al docente para la generación de hábitos alimenticios en la Primera Infancia. Se utilizó el método cualitativo para la interpretación del problema desde la mirada propia del investigador, como también se utilizó como modalidad de la investigación el estudio bibliográfico a través de la técnica de análisis documental para la estructuración de una herramienta pedagógica, a través del arte culinario, de apoyo al docente para los hábitos alimenticios en la primera infancia. Como resultado se estructuró un libro pedagógico denominado “Enseñando con recetas” que contiene la información más relevante con respecto a la importancia del arte culinario como una herramienta pedagógica para transmitir hábitos alimenticios en la primera infancia. El libro contiene 21 recetas aplicables en el aula como material pedagógico de apoyo al docente y está dividido en tres etapas de desarrollo: 6 meses a 3 años; 3 a 6 años; y 6 a 8 años. Se concluye que es importante en el contexto educativo desarrollar estrategias para interiorizar prácticas que contribuyan con todos hábitos, entre estos, los hábitos alimenticios en la primera infancia. Como también, al permitir que la interacción niño-alimento sea placentera se potencia una mentalidad de apertura hacia todo tipo de comida, esto permite que al ir creciendo las oportunidades de experimentar nuevos sabores estén abiertas y los niños mantengan un balance entre las comidas chatarra (o alta en carbohidratos) y las comidas sanas. Por último, es fundamental pensar el arte culinario como una herramienta pedagógica pues a través de esta, se pueden potenciar multitud de aprendizajes, uno de estos potenciar los hábitos alimenticios, pero también puede reforzar habilidades motrices, cognitivas, sensoriales, entre otras.
Abstract
In the globalization of the 21st century, the education sector faces multiple phenomena derived from political, economic, social and cultural changes. However, one of the problems derived from globalization is food habits, and Colombia is one of the countries with the highest rates of food problems in the world. Because of the above, the nutritional behaviors of human beings are being affected by the practicality of consumption of fast and industrialized foods, which is part of an unhealthy lifestyle and may bring future consequences on people's health. In this sense, the most affected by this situation is the child population, who from their vulnerability are prone to consume industrialized products (packages and sweetened drinks). This phenomenon indirectly affects the educational system, transferring the responsibility to teachers for the formation of healthy eating habits, which, in turn, are transformed into dynamic agents of social awareness, for prevention and health promotion through the current problems immersed in the social and cultural context. The main objective of this research is to understand how culinary art can become a pedagogical tool to support teachers in the generation of eating habits in early childhood. The qualitative method was used for the interpretation of the problem from the researcher's own point of view, as well as the bibliographical study through the technique of documentary analysis for the structuring of a pedagogical tool, through the culinary art, of support to the teacher for the food habits in early childhood. As a result, a pedagogic book called "Teaching with recipes" was structured, which contains the most relevant information regarding the importance of the culinary art as a pedagogic tool to transmit food habits in early childhood. The book contains 21 recipes applicable in the classroom as pedagogical material to support the teacher and is divided into three developmental stages: 6 months to 3 years; 3 to 6 years; and 6 to 8 years. It is concluded that it is important in the educational context to develop strategies to internalize practices that contribute to all habits, among these, eating habits in early childhood. Also, by allowing the interaction between children and food to be pleasant, a mentality of openness towards all types of food is encouraged. This allows that as the children grow, the opportunities to experience new flavors are open and they maintain a balance between junk food (or high carbohydrate) and healthy foods. Finally, it is fundamental to think of culinary art as a pedagogical tool because through it, a multitude of learning can be promoted, one of which can strengthen eating habits, but it can also reinforce motor, cognitive, and sensory skills, among others.
