Durante años hemos querido conocer y entender más de nuestras raíces, y es que cada tradición que tenemos, o dejamos de tener, tiene un significado detrás que poco a poco hemos venido descubriendo. En esta oportunidad volvimos al pasado de la culinaria para ver con mayor claridad nuestro presente como colombianos. La papa nativa, como foco de investigación, fue la excusa perfecta para descubrir historias, creencias e identidades en nuestros suelos boyacenses. De esta manera, a lo largo del trabajo de grado y del producto final (libro digital que mezcla lenguaje escrito y gráfico) vamos a devolverle la importancia al acto de comer y a los secretos que yacen detrás de este. Los diferentes factores antropológicos, culturales, históricos y sociales que tuvimos en cuenta, marcaron un camino que hoy nos permite afirmar que, después de todo, sí hay herencia detrás la papa nativa, una herencia que debemos rescatar entre todos.
Abstract
For years we have wanted to know and understand more about our roots, the thing is that each tradition that we have, or no longer have, have a meaning behind that we have been discovering little by little. In this opportunity we went back to the culinary past to see our present, as Colombians, more clearly. The native potato, as the focus of this research, was the perfect excuse to discover stories, beliefs and identities in our Boyacá soils. In this way, throughout the degree work and the final product (digital book that mixes written and graphic language) we are going to return its importance to the act of eating and the secrets that lie behind it. The different anthropological, cultural, historical and social factors that were taken into account, marked a path that today allows us to affirm that, after all, there is a heritage behind the native potato, a heritage that we must rescue together.
