Gastronomy as a Practice of Memory in Afro-Descendent Communities from the North Pacific (Chocó), Residents in BogotáResumen
La presente investigación aplicada tiene por tema central la migración afrodescendiente del Pacífico colombiano a la capital de la república, en particular cómo estas personas, alejadas de su entorno de nacimiento y crianza, establecen nuevas formas de reafirmar sus raíces. El propósito del trabajo es analizar la manera en cómo aquellos migrantes construyen memoria a través de instrumentos culturales como la gastronomía, proceso en el cual generan redes de sociabilidades, refuerzan la identidad y las prácticas comunitarias que los caracterizan.
Para llevar a cabo este propósito, en el primer capítulo se presentan algunos procesos históricos y sociológicos de la población migrante del Pacífico a Bogotá, así como condiciones materiales y simbólicas que dan sentido a sus prácticas gastronómicas: la biodiversidad del Chocó biogeográfico, la configuración humana de la zona, la diáspora africana a América y el legado colonial. En el segundo capítulo, se realiza una reflexión teórica acerca de la gastronomía como forma de cultura y como lenguaje, y se analiza en consecuencia la experiencia del cruce de espacios y tiempos en relación con la gastronomía; lo anterior se aterriza con algunos ejemplos, recetas y preparaciones del Pacífico. El tercer capítulo, por medio de entrevistas a 6 afrodescendientes migrantes explora cómo se concibe para ellos la gastronomía, haciendo hincapié en la manera en que se construye memoria e identidad: historias asociadas, énfasis simbólicos, redes solidarias y construcción de comunidad, preparaciones como rituales de la memoria. El último capítulo es la propuesta de un repositorio web que pueda alojar el material gastronómico para visibilizar las manifestaciones, prácticas y saberes ancestrales de los afrodescendientes migrantes. El trabajo abre un interesante cuestionamiento a la manera de ver la gastronomía tanto por las entidades gubernamentales como por la academia, y propone una perspectiva más amplia en lo que refiere a los campos de la gastronomía y la memoria.
Abstract
This applied research has as its central theme Afro-descendant migration from the Colombian Pacific to the capital of the republic (si puede cambiar por bogotá mejor), in particular how these people, away from their birth and upbringing environment, establish new ways of reaffirming their roots. The purpose of the work is to analyze the way in which those migrants construct memory through cultural instruments such as gastronomy, a process in which they generate networks of sociability and reinforce the identity and community practices that characterize them.
The first chapter presents some historical and sociological processes of the migrant population from the Pacific to Bogotá, as well as material and symbolic conditions that give meaning to their gastronomic practices: the biodiversity of the biogeographic Chocó, the human configuration of the area, the African diaspora to America and the colonial legacy. In the second chapter, a theoretical reflection is made about gastronomy as a form of culture and as a language, and consequently the experience of the crossing of spaces and times in relation to gastronomy is analyzed; with some examples, we analyzed recipes and preparations from the Pacific. The third chapter, explores how gastronomy is conceived for them, through interviews with 6 migrant Afro-descendants, , emphasizing the way in which memory and identity are built: associated stories, symbolic emphasis, solidarity networks and community building, and preparations as rituals of the memory. The last chapter is the proposal of a web repository that can host the gastronomic material to make visible the manifestations, practices and ancestral knowledge of migrant Afro-descendants. The work opens an interesting questioning of the way of seeing gastronomy both by government entities and by scholars, and proposes a broader perspective regarding the fields of gastronomy and memory.
