Resumen
El sector lácteo en Colombia tiene una participación en el PIB nacional del 0,9% y en el PIB agropecuario del 9,7%, porcentajes que posicionan a Colombia como cuarto productor de leche en Latinoamérica (Centro virtual de negocios, 2014). Adicionalmente, en el departamento de Boyacá el sector agropecuario representa el 19.2 % del PIB, ubicándolo en tercer lugar de la producción lechera nacional (Suárez, 2013).
Una de las empresas que contribuye al crecimiento del sector lechero en Boyacá es la Fábrica de Lácteos Belén, dedicada a la producción y comercialización de quesos y otros derivados de la leche. En el proceso de elaboración del queso, se obtiene un residuo llamado lactosuero, sustancia que se destaca por tener compones nutritivos, pero a su vez por ser altamente contaminante.
Actualmente la Fábrica de Lácteos Belén vende el lactosuero producido a empresas de la zona a un precio muy bajo, lo cual no genera ganancias significativas ni aporta al crecimiento de la empresa. Sin embargo, algunos de sus competidores directos han optado por darle uso a esta sustancia, generando desventaja competitiva frente al mercado.
Es por esta razón, que el proyecto a realizar busca aprovechar las bondades del suero lácteo por medio de la propuesta de elaboración de un nuevo subproducto. Esta propuesta tiene como fin incrementar las utilidades de la empresa, reducir el impacto medio ambiental e incrementar su competitividad en el mercado, beneficios que se podrían ver reflejados de manera continua.
Abstract
The dairy market in Colombia contributes to the National GDP by 0.9% and the farming and livestock sector by 9.7%. This contribution ranks Colombia as the fourth largest producer of milk in Latin America (Centro virtual de Negoclos, 2014). Moreover, the agricultural sector of the province of Boyaca represents 19.2% of Colombia's national GDP, placing Boyaca as the third largest producer of milk on the national scale (Suarez, 2013).
La Fabrica de Lacteos dc Belen is one of the many companies that contribute to the growth of the dairy market in Boyaca. This company Is solely dedicated to the production and commercialization of cheese and other dairy by products. Cheese whey is a by product acquired during the production of cheese, a substance that contains important nutritional values, but it is at the same time highly pollutant to the environment.
La Fabrica de Lacteos de Belen currently sells cheese whey for a significantly low price to nearby companies. Something that does not reinforce the growth of the company nor increases the company’s valorization. However, similar dairy companies have opted to give a better use to this substance, which has generated a competitive shortfall to La Fabrica de lacteos de Belen.
For this reason, the following project outlines the potential benefit of the use of cheese whey by the production of a new sub-product. The selection process for this sub-product was conducted through industrial engineering tools. These tools Identified the best product to withstand the market and the company s preset restrictions. The goal of this proposal Is to Increase the application of cheese whey In the company, decrease negative environmental impact and Increase the company's competitiveness on the market
