dc.description.abstract | Objetivo: Determinar el efecto del tiempo y la temperatura en el color generado por el tostado del café. Material y Método: Estudio de investigación tecnológica aplicada para lo cual se desarrolló e implemento una herramienta informática en el software matemático MATLAB, previamente parametrizado usando datos del color durante el proceso de tostado. Resultados: El color se midió en el espacio CIEL*a*b* y los datos se analizaron usando el diseño estadístico de superficie de respuesta. Conclusiones: Las mediciones determinaron que el valor de L disminuye significativamente cuando el tiempo se incrementa, desplazándose hacia 0 lo cual corroboró que el café adquirió tonalidades oscuras a medida que se incrementa el tiempo de tostado. Con respecto a los valores de a y b, estos varían en función al tiempo en forma directa e inversamente proporcional respectivamente. | spa |
dc.description.abstractenglish | This article describes the implementation of a computervision system to determine the effect of time and temperatureon the color generated by the roasting of coffee,for which a software tool in the mathematical softwareMatlab, previously parameterized using color data forthe roasting process was developed and implemented.The color was measured in CIEL*a*b* space and the datawere analyzed using the statistical response surface design.The result of this work is a system that allows for realtimesensory information about color and therefore hasan advantage over existing traditional systems. The studyshows that computer vision system could distinguishdifferent shades during roasting of coffee depending onprocess parameters and good capacity for generalization. | eng |
